Ready to pack a picnic bag? Don’t forget the tigelle, tiny delicious savoury treats without leavening, perfect for picnic as well as birthday or garden parties..
Tigelle are also known as “Modenese crescentine” as they come from the Modena area (Emilia Romagna, Italy). These small focaccine are filled with “salumi” (cured meat, cold cut) like salami, ham, Parma ham, lonza, bresaola.
I took this recipe from the book “Ricette in famiglia”, by Benedetta Parodi, Rizzoli. I thank my sister for this useful and much appreciated present!
Tigelle
Tigelle, tiny delicious savoury treats without leavening, perfect for pic nic as well as birthday parties or garden parties.
Ingredients
- 450 g plain flour
- 250 g plain yoghurt
- 1 tsp salt
- 1 sachet baking powder (16g)
- 40 ml water
Tools
- rolling pin
- wooden board
- cookie cutter
- bowl
Directions
In a bowl mix flour, yoghurt, salt and baking powder (1). Then add water, a little at a time.
Move the dough to a wooden board. Keep kneading with your hands (2), until a smooth ball is formed (3).
Roll the dough with the rolling pin until you have a layer 1 cm thick (4).
Cut the tigelle with a cookie cutter (5).
Cook them in a preheated pan (6) until golden (7). Turn halfway through cooking.
Cut them in half (8) and add the filling (9): salami, ham, Parma ham, bresaola or lonza.
Tips
With these ingredients you can make 30 medium tigelle or 20 large tigelle.
